Following the opening of Rest’ICI in January 2016 in Montreuil, inaugurating its concept of a “bistronomic canteen”, chef Bruno Viala launches two new addresses, this time in Paris : « Le Trois Bis » inside La Gaîté Lyrique and «La Cantine du 13ème Art» inside the new theatre of Place d’Italie «Le 13ème art». Two new “fast-good” addresses to discover in order to enjoy a creative bistro cuisine with a very fast service and all of this imagined by a chef. It will save you from fast food!
Trained by Alain Dutournier (**), Bruno Viala spent time in the kitchens of L’Élysée. He also served as chef or second in many prestigious restaurants, Une table, Au sud (*), Les Magnolias (*), The Family. In addition to his high-end event catering business (started in 2009), Bruno Viala has been developing its bistronomic fast-food concept since 2016: a qualitative vision (menus designed by a chef with fresh products according to the market arrivals) and responsible (The restaurants are partners of the Too Good to Go anti-wastage app) all of this with an efficient service (especially relevant in the case of lunch breaks).

« Le Trois Bis » is the result of a collaboration with La Gaîté Lyrique, a multidisciplinary cultural institution exploring music, innovations and artistic creations in the heart of Paris. It is a beautiful space, nice and peaceful during the week so it’s the perfect place to have a bite to eat !
The place offers lunches : Tuesday to Saturday from 12pm to 2pm, a healthy, fresh, inexpensive offer with a touch of originality with 2 starters, 2 courses (including 1 vegetarian) and 2 desserts. The ideal address for those who want to eat fast but well!
Type of dish: Burgundy beef, Sweet sour chicken stir-fry, Vegetarian arancini with rice and mozza, Eggplant cannelloni and parmesan (vegetarian), Marinated salmon snacked with thyme … all accompanied by a choice of garnishes (ratatouille du chef, pilaf rice, steamed vegetables …)

Review : Finding new ideas for lunch is always a nightmare! We all want fast service but still want to eat healthy…and not too expensive!! Don’t go any further, “Le Trois Bis” combines all those options as promised! As soon as we arrived, we were served immediately by a lovely member of staff. We opted for an onion soup as a starter and a pastry with lamb and coriander, both excellent. For the main, we had a choice between a vegetarian steak with carrots and a sausage from Toulouse served with choucroute. As big fans of traditional food, we opted for the sausage and choucroute (also because the weather was very depressing that day so comfort food was the best option!). It was obviously a little bit heavy for a lunch but it still felt like a nice healthy meal! Very filling too. We really liked the fact that the dishes are mostly served in cardboard containers with wooden cutlery so very respectful of the environment. For desserts we chose a cheesecake with matcha tea and a roasted fig with a cream with almonds. They were good but maybe slightly less ‘gourmands’ than you’d want for a dessert but definitely healthy! An overall excellent experience – a very nice fresh meal in a beautiful environment! Highly recommend.
The place has also just launched their « Brunchs »: Every Sunday from 12:00 to 16:00, Bruno Viala offers four types of brunches separately or to be mixed in the magnificent historic foyer of the Gaîté Lyrique. The new Sunday address for family brunch! UPDATE : Since the brunches are so successful – you can now enjoy a delicious brunch every Saturday as well from 12:00 to 16:00 from February 10th 2018.

Review : As mentioned above, the brunch is served in the history foyer of the Gaîté Lyrique that is absolutely stunning. What a great place for a brunch! There is a huge space so it’s very handy. At the back, big tables are put together with the different brunch offers and there are lots of tables in the foyer to enjoy your food. I am a big fan of traditional brunchs once again so I was happy to try a mix of French pastries, fresh baguette and English breakfast with eggs and bacon! I am slightly less attracted to the healthy breakfast but it will definitely please a great deal of people. There is a wonderful choice of food that makes you wish that your stomach was as big as your eyes! The coffee is excellent and there is a nice choice of juices that are all very good quality. My personal favorite was a nice fresh waffle with some nutella! We definitely recommend as well!
